he vineyards of Château des Sarrins cover 22 hectares around the village of Saint-Antonin du Var. Here in the northern Var about 50 km inland, the vineyards are not planted on the valley floors but on the slopes at 230-250 metres above sea level and the soil is mainly chalk and clay.

hen we first acquired the vineyards in early 1995, they had been planted with Cinsault, Grenache, Syrah and Mourvèdre. These old, high quality vines have, of course, been maintained. Another area of the vineyards was planted with Cabernet Sauvignon, Carignan and Ugni Blanc, destined for Vin de Pays. The Ugni Blanc and the Carignan (apart from a50 years old vine) have now been replaced by new plantings of Syrahs, Mourvèdres et Rolles.

n September 1996, for our second vintage, we finished the cellar which has been built on a gravity system in order to avoid a too violent transfer of the grapes. The grapes are directly delivered to the press house for Whites and Rosés. For the Reds, after being picked off the bunch, the grapes are directly poured into the tanks from the top of the building. The stainless steel cuverie is on the down part and receives the juice by gravity coming from the wine press. Half buried in the hill, it has a natural isolation and is also equipped with a temperature controlled system. The tanks are individually temperature controlled while the barrels - used for the ageing of the reds and the vinification of the whites – enjoy the ambient coolness.

he premium wine carries the Appellation Contrôlée “Côte de Provence” and is sold under the name “Château des Sarrins”. Our white wine – also a premium wine- cannot carry the appellation “Côte de Provence” because it is not a blend but of a one grape variety only: Rolle. It remains a high quality wine, vinified and aged in barrels and is sold under the name of “Les Sarrins”, carrying the appellation “Vin de Pays du Var”.

rom our very first vintage in 1995, the decision was made to select only the finest of the AOC and so just 18 000 bottles of Château des Sarrins Rosé 1995 were produced, along with 6000 of the Red matured in new oak. Today's yearly production is in total of 60 000 bottles, of which 70% Rosé, 10% Red and 20% white.
