Chateau des Sarrins Rosé |
| We systematically pick grapes off the bunch before pressing. The pressing cycle is very slow and light We only keep the first two pressings, the purest, in order to reach a pale rose petal colour (The other pressings are systematically downgraded in second cuvées). The alcoholic fermentation happens slowly and steadily in open tanks (15 to 20 days). To be able to go through a steady fermentation, we maintain a constant temperature of between 20 and 23°C. We keep our Rosé wines in tanks until bottling in the spring following the harvest. A delicate pale pink, rose-petal colour, our Rosé has a very floral nose and is extremely fine on the palate, rounded yet balanced without tending to fat. There is just enough acidity and a long clean finish, leaving the impression of a perfect freshness. (It was our aim to preserve freshness and finesse rather than tend to the softer, weightier style of many Rosés retaining a high level of residual sugar and a strong alcohol content.) Lively, flowery and fruity, our Rose has to be tasted fresh (about 8°C). It is best served with poultry, salads and cold meats. |
Chateau des Sarrins Rouge We systematically pick grapes off the bunch before putting them into the tanks. The grapes macerate and ferment in tanks for 8 to 10 days of cuvaison. This time allows the juice to macerate with the skins of the grapes and the wine improves in structure, body and complexity. After the fermentation, we separate the wine from the skins and leave it in tanks to finish the fermentation. Then the wine is transferred into oak barrels to age for 17 to 24 months according to the vintage. With a deep ruby colour, these wines are powerful and quite tannic. On the nose, the first impression is a bouquet of Rosmary, Thyme, Resin and spices. Then come aromas of dark fruit (black current, blueberry) and chocolate, evolving toward smoky and "eau de vie" notes. In the mouth , tanins are smooth and silky, enhancng a beautiful and elegant complexity. Our red wines are to be served at an ambient temperature (15 to 18°C). They gain on being opened before tasting and served in large glasses which improves aeration. It perfectly marries grilled meats, cheeses and truffles! |
Les Sarrins Blanc de Rolle In 1999, stimulated by the delicious result of the previous year, we more than doubled our production to 7 barrels of 300 litres each.Today, around 12 000 bottles are produced each year. This little wonder offers an aromatic richness well balanced with acidity. The Rolle Les Sarrins reveals aromas of orange tree blossom, vanilla, hazelnuts and citrus with a mineral touch. It has a brushed and fine finish with good freshness. |
